It’s hard for me to describe the awesome taste of a Liege Waffle without going into some theatrical word adventure. Simply put, your first experience of a Liege Waffle, will last in your memory- as long as the feelings you have of your very first Love. The slow motion amble towards each other, through tall grass meadows. The squelch of your bare naked feet on a cool stretch of beach, and the coolness of touch,- amidst the hot embrace of mid-summer temperature’s, as you finally fall into each other’s arms. The welcome sight of an Oasis in the middle of the Sahara…err, you get the gist.
My first taste of Liege Waffles was in the mid 1990’s – whilst on a jaunt through France, Holland, and Belgium. A trip full of adventure, but none compared to the exuberant taste of a freshly made Liege Waffle, served by the Street Vendors all over Belgium. Not to be confused with Brussels Waffles, or the American Style square deal waffles. Liege Waffle is the grown up version of all of them.
Liege Waffles as the name implies, are from the city of Liege in the eastern part of Belgium. It’s a much denser, richer, sweeter and chewer version of Waffles. Its inception is attributed to the chef of the Prince-Bishop of Liege in the 18th century. It’s an incarnation of a brioche bread dough, it has chunks of pearl sugar infused into the dough. The pearl sugar then caramelizes on the outside of the waffle when baked. You can also differentiate it from Brussels waffles by its smaller size, and it’s also sweeter and heavier.
So, don’t take my word for it, try one, and you’ll have a lasting memory of unbridled pleasure to last you through the ages.
